You are describing "should be", but how do you test it? Do you perform stress tests? PS It can be that server OS is optimized for server HW (and FW) - like motherboards with multiple CPU sockets, each socket with its own RAM slots (NUMA topology), with multiple storage and network controllers, with server CPUs (Xeon, EPYC)... Also it can be that server SW/HW is optimized (by default) not for straightforward 'foreground' performance (like in game) but for sustained throughput ('bandwidth') - like amount of parallel SQL/WEB queries from multiple users, like amount of parallel data reading/writing operations.
I have this running now on my Dell T7810 w/ dual Xeon 2690v3's and 64gb ram. Very stable. Have run into a few issues, will post a list this week. Overall though, very impressed.
