Safe OC not sure if something like this exists there, maybe OC models of some GPU does have factory OC which is similar to what are you doing
2145MHz its something what I achieve on my Asus RTX 2080Ti Strix,max OC which I could achieve is 2160MHz with Matrix BIOS or Asus XOC BIOS, 2175MHz OC I tried few times but still now way to run it stable at all games or rendering, in some benchmark I could run it but in gaming or rendering these clocks are unstable
Regarding the VRAM, on my Asus RTX 2080Ti Strix running +700MHz which is OC of +1200MHz against the stock Asus Strix RTX 2080Ti,didn't tried anything above that, I will try it when times allow but I think its more than enough for me there,
Personally I would monitor VRAM temperatures if its possible there, then you can decide if this OC is worth it or not bit usually Gigabyte Aorus are one of better GPUs on market and they OC pretty much best, their old Gigabyte GTX1080Ti Aorus Extreme have been not not best when it comes to OC bit that's different story
Personally I'm running all GPUs OC from day one and no issues with OC there,GTX1080 with 2164MHz and GTX1080 with 2100MHz OC and GTX1080Ti with 2113MHz OC and now running Asus RTX 2080Ti Strix with 2160MHz OC which is my daily OC

I think you have been very lucky
I have had the same cards as you but no one has done 2100 mhz stable gaming.
my asus 2080ti strix oc didnt even did 2000 mhz.
Water is very important here. It's very temperature dependant.
