    I have this PSU

GeForce Specifications on Newegg say I need 580W and 40A minimum.

However the Guru3D page on this card says otherwise:

A single GeForce 9800 GX2 requires you to have a 550 Watt power supply unit at minimum if you use it in a high-end system. That power supply needs to have (in total) at least 35 Amps available on the 12 volts rails.

it more then likely will run it, however, it only has 2 PCI-Express 6 pin connectors, the 9800 GX2 takes 1 6 pin and 1 8 pin, granted, the cards usually come with adapters

BFG always plays it safe when it comes to power requirements for their cards. If you check out other vendors I suspect their recommendations will be closer to those in the Guru3D review.

And how would the ANtec 850W Quattro handle that card?

Without a problem, it has 64A on +12v.
