    "Safari camping place"

Looks like a fun place to do motorsports (I'm sure all those using the quads in the back think so too.)

^ VERY nice llerenaprincipe, how did your brother get the dog to wear the scarf, hat & glasses? On top of that the dog is posing for the picture, what a calm dog it is!

These are excellent. I started trying these myself but haven't yielded spectacular results yet. My few times trying were in lower lighting conditions so that's my excuse thus far.

Does HDR work best with medium - high lighting conditions?

The way I shot mine were in aperture priority mode on a tripod setting the EV to -2EV, 0EV, +2EV, so I did one with three pictures.

I then tried 5 pictures with the same as above except including + and - 1EV. They seemed more or less the same except for tiny tiny details.

I've read that some people change the shutter speed to change the light isntead of using EV.

What method do you guys think yield the best results?

By EV you mean the automatical exposure control offered by cameras?
As long as aperture size and ISO stays the same, anything goes imo.

When you change EV you are essentially changing shutter speed, ISO or aperture, you aren't directly doing anything to the resulting exposure value.
So you can't really "use EV", you have to use any of those 3 to affect your EV.
My point is, if you just use aperture priority, and you change the EV, what the camera is doing is it's changing your shutter speed for you automatically.

Check this video, it explains it really well and this dude has awesome videos on how cameras work and techniques and stuff.

Just try to keep the same ISO (noise) and aperture (depth of field, sharpness) as they will most likely have the most image altering effect if changed as opposed to shutter speed.
HDR works just as well in any situation, the problem is the camera and most importantly software, at least this is my experience.
Of course, you are still the most essential part of taking the picture, I don't care how pro you are creating HDR images, but if you have a bad picture, there's only so much you can do.

PS. Try using manual only, you'll learn really fast and you know what your camera is doing.
