So trying to land an F16 on The Mall in front of a 1940's Buckingham Palace.
The F16 doesn't do slow handling or slow landing particularly well so to get down and not hit Admiralty Arch means a fast rate of descent, and broken undercarriage.

What are you huys using for screen capturing videos? Years ago we used FRAPS and it wasn't great. Google searches had the OBS Studio as one of the best free apps out there. But as you can see the video output is still stuttery. Actual gameplay is very smooth compared to the video.

Is the GForce option any good or just bloatware. Or do I have to bite the bullet and buy an app?

STAR WARS Jedi Survivor 8K HDR Epic Ray Tracing 60 FPS. Amazing game has some serious problems with stuttering. Game has a bottleneck at 1080p though to 4K resolution. When you play at 8K then the GPU starts to get a workout, still stuttering at 8K but you can play the game at around 60FPS+.

Thats interesting as the headlines I've seen (although possibly click bait) have all said it performs poorly even on a 4090, crazy that its fine at 8k.

I've used OBS for years without problems barring occassional driver bugs.
You can get smooth video with OBS for sure.

Best thing about GT7 is driving your own car without fear of losing your no claims bonus.

OBS Studio is the way to go. I use it a lot and enjoy the flexibility it offers. The learning curve is not that steep, try it.
Your video is not stuttery. Guess that's how 30 fps capture is supposed to look like. You can adjust your capture FPS to 60 fps if you want it more fluent and closer to actual gameplay. (if you have high refresh and framerate, even 60 won't match it, but still)
And since you have an NVidia GPU you might want to use the NVENC hardware encoder, check some guide on what encoding settings to use, like:
    https://www.nvidia.com/en-us/geforce/guides/broadcasting-guide/
It's not the most up to date guide, but check the advanced recording settings. They recommend CQP rate control with a CQ value of 15 but I find this to be overkill. Even CQ 26 will give you very clean and crisp recording with much lower bitrate. Adjust to your liking.
If you don't like NVENC, you can always use software x264 for encoding (CRF 23 or lower will net you a good looking video with not too much bitrate at 1080p60), but it might impact your gaming performance more, depending on the game and on your CPU's multithreading and overall strength.

I present to you a small and funny dialogue and Witcher lore gem I captured while testing out Witcher 3 Next Gen's RT mode (which didn't impress me visually too much, but made the GPU work at 100% and seems to be a good load test)

    @TheDigitalJedi
Thanks for the idea. So I tested
Nvidia Shadowplay 60FPS VS OBS 120FPS STAR WARS Jedi Survivor DLSS 3 MOD 4K HDR Ray Tracing,To See If There any Perceived Difference In PC gaming Smoothness.
Nvidia shadowplay colors/quaily got messed up in re-encode,original videos are in description in video.

The image at the bottom looks way more defined with better colours and shadows. I don't see a difference in smoothness but I am watching on a Galaxy tablet so that may have an effect maybe. For me I only recored to put stuff on YT and FB so above 60fps is a bit pointless and for FB above 720p is pointless unless its a link to YT ovs.
