I used to do triple crossfire with HD5870 and HD5970. It seems to work for many games but not all the games. Some games run perfectly with 2xCF but don't even run with 3xCF. As you know, AMD released a driver to fix CF issues (13.8beta driver). However, at this moment, it fixes only 2xCF but not 3x or 4xCF. For this reason, I don't bother to set up my HD5870/5970 for my second rig at this moment. I suggest you to stay with 2xCF for now. When AMD release an improved driver to fix CF issues including 3xCF setup, you could try to add the third HD5870.

However if you want to try anything at this moment, you could set up MSI afterburner software to monitor the activity of gpus. CF requires you to disable Ulps (http://forums.guru3d.com/showthread.php?t=327291). You could run 3DMark as a way to check out the CF performance since the synthetic tests like 3DMark are optimized to utilize CF/SLI efficiently. If you get a benchmark result which is consistent with other people's result with 3xHD5870, your setup is working.
