I have just been messing with munt recently, a roland MT-32 emulator, and to hear what music was being produced in the likes lucusarts and Sierra and other companies way back in the last 90's is simply amazing, you should give it a go, open your ears to some fantastic music.

 

Red Alert 2 - In deep, no doubt. And also Crysis 2 has some great soundtracks.

Rock n Roll Racing on the SNES, When you put black Sabbath in an already awesome game its a winner for me.

 

Any soundtracks by Frank Klepacki, including the Command & Conquer series. I know it was mentioned already, but loved the Painkiller OST as well.

Turrican 2 (Amiga) <= Possibly my favourite game soundtrack of all time... the title track still sounds incredible today IMO
Master of Magic (C64) <= Rob Hubbard's best score IMO
Jet Set Radio Future (XB) <= Great soundtrack, period, but Concept of Love is just so damn catchy!
The Elder Scrolls IV: Oblivion (PC)
Ghouls 'n' Ghosts (Amiga) <= Awesome title track by Tim Follin

Oats in the Water - Ben Howard - Witcher: Wild Hunt

 

Sonic 2 on the Mega Drive, loved the music in that game.
