Why are you using such an outdated version?

The super old version of Inspector (before Inspector/Profile Inspector split) doesn't even work with newer drivers. Crashes/errors and bugs, settings not applying or named correctly, etc.

Iam a little bit confused with the nvidia profiles maybe someone can help me out.
I try to modify the mass effect andromeda profile to use 3way sli (from standard it uses only 2way) which point in "6-SLI" in invidia inspector i have to change?
Iam confused about "NVIDIA predefined number of GPUs to use..." because there are two of them one with directx10 and one without.
And have i to change all settings manual from auto to 3gpu?

Does 3-way SLI even work in the latest drivers outside of 3DMark and such?

3-way and 4-way SLI is still technically possible with Pascal, only you will not get the additional bandwidth benefits of the HB bridge ;)

Is it technically possible to driver—force HBAO+ (and SGSSAA, MFAA, AF, ect) on 3D videogame console emulators(ePSXe, PCSX2, PPSSPP, Dolphin) using certain flags?

It should be, providing you are using the right executable and driver compatibility profiles.

Sorry, since the split of the two. I haven't really considered putting in info about the standard NI.

Guru3D has an up to date link for that however IIRC on the main website.
