Man that is a tough question to answer. I don't think I can name just one... Actually I would say that it just changes all the time. But I'll have to say Joe Satriani will have been the most on my list. Just about any of his solo's are just really great - always very well played.

I'm also a huge Dream Theater fan, and a guitar player (are there actually any non-musician DT fans?). I remember an interview with Petrucci telling the tale of him struggling to finish that solo, sitting in the studio with Mike Portnoy, bouncing ideas off him. It's basically him channeling Gilmour, and then throwing on some patented Petrucci shred runs. Speaking of Gilmour, his playing always gets me. to me without a doubt "Van Halen - Love Walks In" the solo by Sammy Hagar during the Live '86, it's not very technical but this solo has always touched me like no other solo and imo it's the best solo i've ever heard. it's even better than the original solo played by Eddie Van Halen himself, it's different too. 2:20 to 3:05 , then the epic final solo @ 3:55 till the end. http://www.youtube.com/watch?v=2rvri_da8_E
