Hello, the Creators Update is pure s**t, and I want get rid of it. I have and ISO with the Anniversary Update for the format, but I want to get all the updates too BEFORE the latest build of the CU. Is that possible or I have to stick with the old and "vanilla" build of the Anniversary Update? Thank you.

If it's at least W10 Pro, once you install, just check the "defer feature updates" tickbox in the Windows Update app. This will get you all updates except the Creators one. You'll only get the Creators update once it's been marked as stable by MS (probably 4 months from now.) If it's W10 Home, this won't work.

No issues here either but I'm on AMD, not Nvidia. All the issues seem to be confined to Nvidia cards and drivers.

In about 4 or 5 months when the update will be deemed as stable and made mandatory. In MS terms, it's when they will be put it in the "Current Branch for Business". The current one (1703) and two older versions (1607, 1511). 10240 and 14393 will be serviced for 10 years like the older verisons of windows and a new LTSB will be released in 2019 so that will also get another 10 years. They complicated it for themselves imho
I find 1511 to be the best version so far.. some of the things they introduced in 1607 set off my ocd a bit too much haha.. currently using 1511 and choosing the updates myself and installing them manually.

For current branch for business, yep. They'll just not release the security updates for any installation that is not LTSB.
We can assume that LTSB is like 1% of all legal Windows 10 installations, so basically non-existent. Same case as Windows XP Embedded - supported until 2019, but nobody will say it's still supported .
You can search for updates with Microsoft Update Catalog http://catalog.update.microsoft.com For 1511 get kb3198586-x64, it's quite a large update.. it should be about 1GB in size, with that applied it becomes a pretty darn good build in my opinion. *Edit* After a little looking "I haven't looked for a new build for a while hehe"... Yes, completely Disabled due to there not being any Manual Update Option like in previous Windows. You will need to enable Windows Update Service to install the manual update, once your system has restarted and the update is applied, disable Windows Update Service so it does not do things by itself. I also recommend using Netlimiter, it's a pretty cool program that lets you limit the speed programs can download and upload, the cool part is that all connections go through this program so you can see what is connecting to the net. This is everything on my system after a full day of use.
