It has been a long time but am I right in thinking my 2GB 4870x2 actually has 1GB functional memory like Xfire/SLi or do I get full 2GB, bit of a stupid question but somehow i have completely forgotten how it works..

It's 2 GB of mirrored memory. While it may be faster this way, so it can load/unload textures quicker, you still only have 1GB available to fill up.

It has it's ups and downs.

Yer always better off getting a newer series card aka 7970 with more vram.

Quicker than a 2GB card with a single memory interface perhaps but not faster than a 1GB card with the same memory interface/data rate so for all intents and purposes the memory subsystem is only as effective as it would be for a single card. Unless I'm missing something I'm quite sure that's how the technology works in it's current implementation?
