Yeah, I love the effect of the lights, especially if you leave the exposure on for 20 seconds or more you get light trails/effect of the light.

HDR is a process that can be done by combining multiple different exposures into one exposure and then using a process call tone mapping to adjust the detailing of the shot.
HDRs can be made with 3 or more exposures combined, but you could technically make an HDR out of just one photo.. just make three copies at different exposure levels and the combine them in photomatix or whatever your preferred software is. You can do it in PS as well, but I prefer the convenience of Photomatix.

Some cameras now actually have an "hdr" mode that will make the photo for you right away, but I find them to lack the real creative side of making the photo, which leads me to my next point.

Yes there is indeed plently of editing that could be done after the fact. I mean, at that point your could treat your HDR photo like any other.. adjust exposure, cropping, contrast, white balance. This is where you have the creative control (aside from the control you have when making the hdr naturally).
Me personally, I tend to make the HDR, get it looking how I want in the software like photomatix, then I will take it into photoshop, adjust sharpness and some other settings and then if I wish to add vignetting for instace, I will take it into Lightroom briefly and then output a final copy with it resized how I prefer.

Uhm, no. Your two initial images differ only in DOF (and max. sharpness.) Overlaying them shall give an interesting effect, but not tone compressed HDR.

^ well the same is true for digital. I mean, if I take a photo at f2.8 the dof will be fairly shallow where if I take a photo at f11 or more, everything (generally) will be sharp in focus.
When talking about HDR we're not generally talking about DOF really.
