Hello,
is there any way to know the history of applications using the GPU ?
Because during Windows idle time, I have my GPU frequency increasing and memory at maximum frequency.
I would like to detect the culprit process to exclude it but as soon as I touch the mouse it disepear like a ghost...
Any idea?

Maybe try "Process Explorer" and/or "Process Hacker". Both have a system information window with hardware resources usage in graph form:
