Does the softFireGL mod fully converts the gaming card into it's workstation
equivalent (meaning that you loose the gaming features of the card) or it
    simply unlocks the workstation features?

My X1800XT crapped out and I got a real nice offer on a pair of X1950 PROs.

I don't know if it's worth it because if I convert them into FireGLs, I'm not
sure if I loose the Crossfire.

Generally, FireGL drivers are much more conservative than the gaming Catalyst drivers, so a lot of options are not visible in the control panel. That's why a lot of users rely on thirdparty software like ATITool or ATITrayTools for additional tweaking.
So, you will probably lose crossfire functionality since there are no FireGL crossfire cards, but it doesn't hurt to try. ;)
