Will my system bottleneck a single Nvidia GTX 670? I am thinking of ordering one from Newegg.

Nope, although why are you downgrading from 6870 crossfire? Although I guess it's a good thing, you'll be less bottlenecked with one 670 than two 6870's. Despite what people will tell you, a FX6100 at those clocks will give you very reasonable performance in CPU demanding titles at 1080p or higher.

1GB memory limit in BF3 is holding me back.

only noteworthy in cpu limited games but it will generally run fine. keep that cpu oc on

BF3 is highly multi threaded and gpu heavy, should be fine.

kinda a side grade...waste of money. The only way you can really justify the purchase is if your running out of vram....if you are then go for it. If not wait for gk110 or whatever amds next card is if it's any good.

Heck, I've installed an MSI GTX670 OC Ed in my FX4100 @4.2ghz + Asus M5A97 EVO, handles the games I've thrown at it with ease......I'm talking about the CPU BTW.
