So I'm in need of some new thermals for one of my cards and I'm not sure what thickness the stock pads are. Can anyone point me in the right direction? I was thinking 1.0mm but I'm not sure. Any help appreciated!

Which one?

AFAIR, on custom ArcticCoolingX cooler they were in 0.5-1.7mm range.
If I were on your place I'd use 1mm pads.
