After a few hours of tweaking, thats what i've got with my setup:
Intel Core i7 2600K //5,0GHz HT Off <-> 4,8GHz HT On//
RL: Antec Kühler 620
ASUS P8P67 WS REVOLUTION B3 (PCI-E 3.0, Ivy Ready) Tri-SLI Ready
Corsair Vengeance, 8GB DDR3 1600MHz, 9-9-9-24, 1.5V (2x4GB)
Nvidia Zotac GeForce GTX 580
Seagate Barracuda 7200.14 2TB SATA3 64MB
Western Digital Caviar Green 1TB SATA2 SLAVE
Western Digital Caviar Green 1TB SATA2 SLAVE
Antec P183
1,464V max and 85 ºC max under Prime95 for 5,0GHz HT off
and
1.432V max and 87 ºC max under Prime95 for 4,8GHz HT on
What do you think? Are those results ok?

Look absolutely fine for your setup and those overclocks. 85c is a little high, especiallt at 1.45v and above so you might want to consider adding anotehr fan to your antec kuhler for push-pull if you haven't already, or consider setting it up to pull air from outside the case. You might also want to consider checking voltages under load for a more accurate idea of the required voltages as max voltages will be based on your LLC settings.
Nice to see you got your system all setup and it's overclocking well

I see those temps at 4.8ht with p95. Its your load 24/7 temps you need to be concerned with. I get in the low 60s to mid 60s load 24/7 temps

Thanks for your comments ^^
I get those temps (low 60s to mid 60s) under load, TK.
About "adding another fan to my antec kuhler for push-pull", how many degrees can I expect to lower the temps? 2 or 3? More?
I can consider that option. BTW, I am already pulling air from outside the case.
In case I decide to add another fan, I suppose I have to connect it to a case fan connector, as the cpu fan connector is already in use with the main one of the Antec 620 cooler, right?

absolute max I say 5c, probably less by adding another fan for push pull. I run a megahalems rev b with a push pull config. every little bit helps. use an available fan header on the m/b for the other fan

Well, im going to add that 2nd fan in summer.
I have fine tunned the OC with offset mode, and im getting 4,8 HT On with 1,424 V max (1,088 V min) with lower temps (around 80 C prime, mid-high 20's in iddle).
1,448 V max for 5,0 HT off in prime, and same other temps and V for iddle.
Should I try to go for the 5,2 GHz Ht off and 5,0 GHz Ht on?
Or should I stay with what i've got. I think 4,8 and 5 are the limits for my CPU. But if the performance gain is worth i can "force it".
One thing that surprised me, is that by just swapping from a i7 920 @ 4,2 HT off i've seen a massive increase in gaming performance (25-30% increase or so). I wasnt expecting that much!

That's for you to decide if you want to overclock higher or not
Though with temps at 80c in prime I would say you are already at a good level for your current cooling. The performance increase from an i7 920 @4.2Ghz is about right given the higher clock rate and newer architecture but perhaps the applications you run are very cpu bound too.

I'm not confident about running past 1.45v 24/7 albeit using offset and speedstep.
I run @ 4.8GHz using 1.39-1.4v with temps in prime maxing at 63-66c
My chip will do 5GHz using about 1.46 - 1.48v (havent fine tuned it) and max temps in prime are about 75c which is fine but reading around the web people seem to be warning against >1.45v saying that this is no good long term. I want to run @5GHz but don't want to degrade my chip like with my 920 which stopped doing 4.4GHz after a while..

Wow! If your pushing mid 80's in Prime95, LinX would really put a hurt on your chip. I try to keep my temps <80c in LinX which correlates to the mid 60's in P95. Guess I am a wimp cause I have never pushed more than 1.368 volts either.
